“Basically the natural version of glutamate,” explains juror Katharina Seiser. Rice, water, and salt – LUVI Fermente’s liquid Shio Koji needs no other ingredients. The fermented sauce is unpasteurized and, according to the manufacturer, “ideal as a marinade or tenderizer for vegetables, meat, and fish.” The salt used comes from the Salzkammergut region, and the organic rice from Italy. It has been used as an all-purpose seasoning in Japanese kitchens for centuries.

It enhances the natural flavor of a dish without pushing itself to the forefront.

Shio Koji is particularly suitable for marinating and seasoning vegetables, tofu, fish, and meat.

During the production process, steamed rice is inoculated with the noble mold Aspergillus oryzae and then matured for several months in a brine made with rock salt from the Salzkammergut.

After maturation, the mash is pressed, filtered, and bottled.
