Pearled barley may be hard to find for some. So we’re willing to share ours with you ;)

We get it from a local organic farmer, who polishes the barley more than usual. This way, the koji has an easier time growing into the kernel.

This barley needs to be soaked for about 4-5 hours before steaming.
