Our long-aged miso! Entirely made from organic Austrian barley and soy.
Compared to our Shiro Miso, this Miso is stronger, more savory and less sweet. That makes it a very nice base for all sorts of soups.
Do you see the small white dots in the picture? These are Tyrosine-Crystals. In Japan they call them umami-crystals and are a sign of thorough proteolysis :)

This one isn’t exactly to my taste, especially as it tastes almost as mild as the Shiro Miso. For a Mugi Miso I prefer a somewhat more “pronounced” taste.
