Black garlic is not a special variety of garlic. It is produced from fresh garlic by storing it at a high temperature for 90 days. In the course of this elaborate refining process, the garlic also takes on its deep black color, the consistency becomes jelly-like soft and the taste shifts to a sweetness reminiscent of balsamic vinegar. All the pungency of the garlic disappears.
