The ingredient list for Ramen noodles is quite short, just four ingredients. But one of the ingredients has been quite hard to find: Kansui.
Kansui is an alkaline substance which gives Ramen noodles their characteristic texture, taste and appearance. Kansui acts upon the gluten structure of the noodles, which results in firmer noodles.
Some recipes advise to put baking powder in the oven, but I never felt much like baking baking powder (what a waste of energy for a subpar result!). On top of that, baking powder always comes with an acid mixed in, so it’s just not going to cut it. After researching the topic for a while, we were able to source proper Kansui powder.
50 grams of Kansui per bag. You need about 2 g per portion of noodles.

Kansui is very alkaline substance. You need to be careful handling it. Wash your hands immediately after handling it (in order to avoid rubbing your eyes with Kansui-fingers!)
We are legally obliged to write these warnings. Do not be taken aback, the EU allows these substances to be used in foods with no restriction on maximum amounts. Also it is used to make ramen noodles everywhere. But we are selling this stuff super pure, which is why you need to be careful.
